There is a very easy recipe to prepare the hugely popular dish, sambar, especially used as the main side-dish for idlis, which have the reputation of the world’s best and most nutritious breakfast item!
In this method, you need not even boil the Bengal gram (Thuvaramparuppu), an essential ingredient of sambar!
Ingredients
- Bengal gram (thuvaramparuppu) - 25 grams
- Green gram - 25 grams
- Split gram - 25 grams
- Tomato - 1
- Green chili - 1
- Small onions - 4
- Sambar Powder - 3 tablespoon
- Turmeric powder - half teaspoon
- Asafoetida - quarter teaspoon
- Coriander leaves a small quantity
- Salt - as required
To sauté:
- Oil - 3 tablespoon
- Mustard: half teaspoon
- Black gram - half teaspoon
- Small onion - 4
- Curry leaves: a small quantity
Recipe:
- Keep the pan on the stove and switch the fire on.
- Add the 3 lentils - Bengal gram, green gram, and split gram. Roast till lightly golden brown. Remove and let cool.
- nce cool, grind it into a smooth powder. Mix it in water. Chop the tomato into small pieces. Cut the onion and the green chili lengthwise.
- Keep the pan on the stove. Add 2 tablespoons of oil. Add the cut onion and green chili and fry.
- Add tomato and fry more.
- Add water and salt and let this boil until the masala smell goes.
- Now add the sambar powder. Allow boiling for a few minutes. Add chopped coriander leaves and switch the stove off.
For sautéing:
- Keep the pan on the stove. Add 2 tablespoons of oil. Allow it to become hot. Add mustard and let it crackle. Now, add back gram. Fry to golden color.
- Now, add the small onions and the curry leaves. Fry for some time and now add this sauté to the sambar and mix well!
Yummy, tasty idli sambar is ready!
Notes: Take equal quantities of the 3 types of lentils - green gram, Bengal gram, and split gram. Fry this mix in a pan till golden, cool and then grind into a smooth powder. This can be stored and used when required!
