Brinjal Chutney. Explore the unseen flavor of Brinjal

You perhaps would have tried a lot of dishes using Brinjal such as Brinjal rice, Brinjal thokku, Brinjal Kulambu, Brinjal Sambar and more! There is even Brinjal Poriyal! While a few people hate the vegetable for its slimy consistency, there are many Brinjal lovers out there too! No matter what, you cannot deny the health aspects of the vegetable! It keeps your blood sugar under control and helps you stay heart healthy. The vegetable is helpful in preventing you from cancer. Those wishing to shed some kilos can grab this vegetable every alternative day as it keeps you fuller for longer, being fiber-rich.

Well, why are we talking about the benefits of brinjal here? Cos, we have a lip-smacking, simple and easy-to-cook bachelor recipe which is Brinjal Chutney!

This needs no expertise! All those looking for home-cooked delicacy in no time, here you go:

The ingredients:
  • Brinjal 8 to 10 (Medium sized; cut to cubes)
  • Onions 1 (large sized; sliced)
  • Tomatoes 4-5 (medium sized; sliced)
  • Green chillies 4 (slit)
  • Coriander a handful
  • Salt as required
  • Oil as required
  • Coconut 5-6 pieces
Ingredients for tempering
  • Mustard seeds tsp
  • Urad Dal tsp
  • Cumin seeds tsp (optional)
  • Curry leaves 2 strings
Note: cut brinjal into cubes and keep them immersed in chill water so that the vegetable doesnt turn black in color.

Cooking method
  • Take a pan and add required amount of oil for frying brinjal and onions
  • Once oil is hot, add sliced onions and fry until golden brown
  • Once onions are fried, add cut brinjal and stir fry
  • As the brinjals get slightly fried, add green chillies and tomatoes
  • Finally add a handful of coriander leaves
  • As the entire mix gets fried, switch off the stove and transfer the mix to a plate.
  • Let it get cooled down. Now transfer this to a mixer jar and grind it into a fine Chutney along with coconut. Add required amount of salt to the Chutney at this stage.
  • Take a pan and add oil for tempering. Once oil is hot, add mustard seeds, urad dal and cumin seeds and curry leaves.
  • Add the tempering to the chutney and mix well.
Tip:
Brinjal chutney can also be made by grilling the brinjal as a whole. For this, turn on the gas stove and start grilling the brinjal directly in fire. Check the brinjal whether cooked by intermittently inserting a toothpick or a knife. Once cooked, let it get cooled down to room temperature and peel off the skin. Now smash the brinjal using potato masher and add with the fried onions and continue with the same steps as mentioned above: add tomatoes, green chillies and coriander leaves and saute well, and grind it with salt and coconut in a mixer jar.

This grilled brinjal gives you even more taste and flavor to the dish.
