Healthy Food Recipes - Vendhaya Puli Kuzhambu (Methi Kara Kuzhambu)

Ingredients:
  1. Small Onion – 15 nos (100 grams)
  2. Garlic –10 cloves
  3. Tomato – 2 nos
  4. Tamarind – a small lemon size
  5. Cooking Gingelly oil – 5 tbsp.
  6. Mustard seeds – ¼ tsp
  7. Cumin seeds – 1 tsp
  8. Fenugreek seeds(Vendayam) – 3 tsp
  9. Asafoetida – a pinch
  10. Curry leaves – a few
  11. Turmeric Powder – ¼ tsp
  12. Sambar Powder – 1 ½ tbsp.
  13. Fried gram powder (optional) – 1 tsp 
  14. Salt – as required
Method of Preparation:
  1. Heat oil in a pan, temper mustard seeds, cumin seeds and add fenugreek seeds till nice aroma arises.
  2. Then add chopped onion, garlic, a few curry leaves and a pinch of asafoetida and saute well.



  3. Saute well for a minute.
  4. Add chopped tomato, saute till it shrinks and the raw smell leaves.



  5. Add turmeric powder, sambar powder and salt to taste.
  6. Then add tamarind extract to it.



  7. Boil well for about 5 to 10 minutes. To get a thicker consistency, add one tsp of friedgram powder. Stir well so as to avoid the formation of cramps.



  8. Add a spoon of Gingelly oil, before you switch off the flame.
  9. Switch off the flame and transfer it to a serving bowl.



  10.  Serve hot Vendhaya Puli Kuzhambu with rice! 



Tips:
  • For a thicker consistency, add half a spoon of fried gram powder when the kuzhambu gets boiled well.
  • Dry roast fenugreek and grind it to a smooth powder and store it in an air tight container. While preparing pulli kuzhambu, just add a spoon of fenugreek powder at the time of boiling.
  • You can also add a spoon of grated jaggery, just 5 minute before you switch off the stove. It will give different taste to the dish.
Fenugreek (Vendhayam) Uses:
  • Dry roast fenugreek, grind well and store it in an air tight container. Mix a spoon of fenugreek powder with honey. Best remedy for stomach ache.
  • Apt for diabetic’s patients, as it stabilizes the blood sugar level.
  • Soak a spoon of fenugreek overnight. Drink this water early in the morning in empty stomach. This water has many health benefits and particularly it can ease body heat.
  • In all kind of dal dishes, while tempering along with cumin seeds, mustard seeds, you can very well add a spoon of fenugreek. It will augment aroma to the dishes and serve many health benefits.
  • Fenugreek has the potent to solve hair related ailments.
  • Mix 2 spoons of fenugreek powder and 2 spoons of curd. Gently apply it on the scalp and leave it for about half an hour. Wash your hair thoroughly. It can ease you from dandruff and hair fall problems. Also it adds more shine and softness for your hair.
