Ingredients:
- Amla / Nellikai – 3 nos
- Onion – 1 no
- Tomato – 1 no
- Red Chilli – 2 nos
- Urad dal – 1 tbsp.
- Channa dal – 1 tbsp.
- Toor dal – 1 tbsp.
- Curry leaves – a few
- Cooking oil – 2 tbsp.
- Salt – to taste
- Asafoetida – a pinch
- Mustard seeds – ¼ tsp.
Method to Prepare:
- Chop amla, onion, and tomato and keep aside.
- Heat pan with a spoon of oil and add Urad dal, Toor dal, Channa dal and sauté well until dal turns light brown and then add red chilli and keep aside.
- Again heat the same pan with 1 spoon of oil and add chopped onion and curry leaves. Sauté well until onion turns caramel brown and then add chopped tomato and amla. Sauté well for about 2 minutes and then switch off the flame.
- Keep it aside and allow it to cool for some time.
- First grind all the roasted dal and red chilli in a mixer. Then add the sautéed mixture of onion, amla and tomato, add salt to taste and grind it to a coarse paste.
- Transfer it to a bowl. Heat a pan with a spoon of oil and add mustard seeds and a pinch of asafoetida for tempering. Once it splutter add it on top of the chutney and mix well.
- Serve delicious and healthy Amla Chutney with rice.
Tips:
- It is better to avoid adding water while grinding the chutney in the mixer. If at all needed, you can add only a little bit quantity of water, else the dish will be bitter in taste.
- You can store the chutney in an air tight container and use it for about 2 to 3 days.
- You can also add a piece of coconut in this chutney, but you have to finish it off on the day of preparation itself.
- This amla chutney is an apt side dish for any type of variety rice and (sambar, rasam and curd rice).
