Ingredients:
- Button Mushroom – 10 pieces
- Raw rice / Basmati Rice – 400 grams (2 cups)
- Onion – 2 nos
- Tomato – 2 nos
- Mint leaves – a handful
- Cinnamon – a small peace
- Cloves – 3 nos
- Fennel seeds – 1 tsp
- Bay leaf (Brinji leaf) – 1
- Cooking oil – 5 tbsp.
- Salt – to taste
- Garam Masala – ½ tsp
- Red Chilli Powder- 1 tsp
Ingredients to Grind:
- Cinnamon – a small piece
- Cloves – 2 nos
- Fennel seeds – ½ tsp
- Onion – ½ piece
- Tomato – ½ piece
- Ginger – a small piece
- Garlic – 10 cloves
- Elachi – 1 (optional)
Method to Prepare:
- Wash rice thoroughly and soak it in water for about 20 minutes before the preparation.
- Wash mushroom in water. Heat water in a pan with a pinch of salt in it. Add the washed mushroom in it for about 3 minutes and drain it completely.
- Chop mushroom into small pieces and keep aside.
- Grind the ingredients given under the ‘to grind’ section and keep it ready.
- Heat a pan with a spoon of oil and add cinnamon, cloves, fennel seeds and bay leaves. Once it splutters add the chopped onion and sauté well.
- Once onion turns caramel brown, add the grinded paste to it and sauté well.
- Now add the cleaned and chopped mint leaves and sauté well.
- Now add the chopped tomato to it and mix well.
- After a minute, add the chopped mushroom to it and mix the ingredients well.
- Now add Garam masala powder, Red chilli powder and Salt to taste and stir well.
- Once the ingredients gets mixed well, transfer it to the pressure cooker and add the completely drained rice to it.
- Mix the contents well and add required quantity of water and close the lid. (For 2 cup of rice add 4 cup of water).
- Cook it for about 1 whistle and allow it to boil well for about 5 minutes in a low flame. Then switch off the stove.
- Once the pressure gets released, open the lid and transfer it to a serving bowl.
- Garnish it with chopped coriander leaves.
- Serve hot Mushroom Biryani with onion curd salad!
Tips:
- You can very well reduce the quantity of the chilli powder and add more green chilli to the biryani.
- While using Raw rice or Basmati rice for r the preparation of biryani, it is always good to sauté the ingredients well in a pan before transfer it to the pressure cooker. This is mainly because the ginger garlic paste may get stick on to the bottom of the cooker itself.
