Required Ingredients
- Rice flour – 1 cup (There are ready mixes available for making Kolukattai. You may try them too)
- Salt - as required about a half tsp
- Water – 1.5 cups
- Thick coconut milk – 1 cup
- Thin coconut milk – 2 cups
- Cardamom powder – 1 tsp
- Ghee – 1tsp
- Sugar – to taste
Cooking Method
- Take a wide bowl and add the rice flour. Add water in little portions and mix with the flour to achieve a smooth batter
- Heat a non-stick Kadai and pour this batter. Keep stirring intermittently and you can see the batter getting thickened and leave the pan in the sides. At last, you will have a thick dough.
- Once this is done, take it off the stove and set it aside for cooling
- Add a little ghee and make it a smooth dough
- Lubricate your hands with ghee and start making tiny dumplings out of the dough.
- Take the same kadai and heat thin coconut milk in it. Allow this to get slightly boiled
- As it boils, drop the dough dumplings into the milk one by one. Keep in mind that the milk should keep getting boiled continuously. Do not add all the dumplings together. Add them one by one
- Let the dumplings get cooked for about 5 minutes.
- As it gets cooked, add cardamom powder and sugar (it is optional to add jaggery in the place of sugar).
- Now simmer the flame and cook again for 2 minutes
- Turn off the heat and finally add thick coconut milk. Give it a nice stir and serve the dish in warm temperature.
