Here are the ingredients
  • Chicken – ½ kg
  • Onions – 2 (medium sized; cut to cubes)
  • Green chillies – 2 No (Slit)
  • Garlic – 10 cloves
  • Ginger – of the size of index finger (cut into garlic-sized pieces)
  • Chilli powder – 1 tsp
  • Coriander powder – 2 tsp
  • Turmeric powder – ¼ tsp
Ingredients for tempering (here happens the flavorful magic)
  • Cloves – 4 No
  • Cinnamon sticks – 2-3 Nos.
  • Cardamom pods – 2 No
  • Bay leaf – 1 No.
  • Fennel Seeds – ½ tsp
  • Coriander leaves – a handful
  • Salt – to taste
Preparation

Thoroughly clean the chicken off the dirt, and cut them into small pieces of your ideal size.

Cooking method
  • Take a mixer jar and add cut onions, green chillies, a spoon full of coriander leaves, ginger and garlic.  Grind all these ingredients into a smooth paste
  • Take a deep-bottomed pan and add enough amount of oil to fry the chicken pieces
  • As oil gets hot, add the items for tempering: cloves, fennel seeds, cinnamon sticks, cardamom, and bay leaves
  • You can find the items getting sputtered in oil. Now, add the ground paste and saute well until all the raw smell of onions, garlic and ginger go away
  • This may take about 4-5 minutes. At this stage, you need to keep the flame in simmer or medium as the ginger garlic paste may get easily burnt in the pan.
  • As you feel the aroma of the paste getting nicely cooked, it is time to add your chicken pieces. Gently add the chicken pieces to the onion paste and give it a thorough mix altogether.
  • Now, add coriander powder, turmeric powder, and chilli powder and required amount of salt to the dish and toss all these items together
  • Saute the chicken in oil well.
  • Now, sprinkle some water (remember not to add too much of water now as the dish may get mushy). Chicken will ooze out water as it is cooked, and so relax and add very little water of just about quarter cup.
  • Now close the pan with a lid and allow the chicken to get cooked well in the pan. You may have to intermittently stir the chicken.
  • As you find the chicken turning juicy and tender, you may turn off the stove and garnish with coriander leaves.
This dish is an excellent combination with Sambar Rice or Rasam Sadham. This is in fact an all-rounder and serves good as a starter as well! Even for Dhosa or Idli, the dry fried chicken will work wonderfully. Go on and try the no-expertise chicken fry recipe that needs no extra masala or special powders to give it an added taste.
