Ingredients:
Dosa batter: Soak 4 parts of washed and cleaned rice (idli rice or boiled rice) and 1 part of washed and cleaned black gram (urad dal or uluthamparuppu) with a pinch of fenugreek seeds separately for 6 hours and 1 hour respectively. Drain after the soaking – and grind them separately into a smooth batter. Mix them together and allow for fermentation overnight or for 8 hours. Doas/idli batter is ready.
Nattu Sakkarai: Unrefined sugar is easily available in the market
The recipe
- Take the dosa batter and make dosa as usual.
- When the dosa is half cooked, evenly sprinkle some unrefined sugar (add nattu sakkarai) on top.
- Let the unrefined sugar get caramelized.
- Fold the dosa without turning it around and serve it hot.
This is an ‘easy- to- make’ recipe which can be eaten without any side dish
