How many of us know about white pepper?
Also known as safed mirch, white pepper is made from dried inside of the fruits of the pepper plant. It is known in Tamil as ‘Vellai Milaghu’. It is white or grey in colour small globes of approximately 3 to 4 mm and white pepper comes from the same plant just similar to black pepper. The plant is piper nigrum.
The processing of white and black pepper is different. It is important to mention that black peppercorns are picked after they get ripe and dried out in the sun.
Outer cover of the seed is removed before or after drying and by this white pepper is prepared. More aromatic in nature, white pepper becomes bitter more easily when compared to black pepper. Many light coloured dishes have got white pepper in them.
White pepper has got many nutrients like protein, fibre, calcium, iron, magnesium, potassium, phosphorus, sodium, folate etc.
