Christmas recipe: Sponge Cake

Christmas is around the corner and people are excited to show their real baking skills. It is really therapeutic to bake a cake. The aroma spread in the home all over during baking leaves the kids excited about tasting the fresh hot spongy cake.

So, here we present to you the very basic recipe for making a sponge cake. This recipe is purely intended to help all the new bakers who wish to try their hands on baking in a microwave oven.

Here are the requisites.

  • Microwave oven
  • A cake tray that is compatible on microwave

Ingredients Required:

  • Maida 1 cup
  • Sugar 1 cup
  • Butter 50 gm
  • Salt a pinch
  • Baking Powder 1 tsp
  • Baking Soda 1 pinch
  • Egg 1
  • Nuts and raisins a handful
  • Vannila essence 1 tsp
  • Milk cup

Preparation:

  • As the first step, take the sugar and make it into a fine powder in a mixer jar.
  • Take the eggs and separate the egg white and egg yolk. Make sure to separate them clearly so that the two doesnt get mixed with each other even in little portions.
  • Separately, beat the egg white into a fluffy mix using a hand blender or an electric blender, if you have. This may take about four to five minutes. It should be very fluffy and voluminous as compared to the original volume of egg white that you had saved.
  • Likewise, beat the egg yolk until it is fluffy and all the darkness of the yolk gets transformed into a mild yellow color.
  • Now get the butter melted. Make sure not to overheat the butter. Just get it melt in the oven. For this, take a ceramic bowl or any microwave safe bowl and place 50 grams of butter in it. Get it melted in the heat.
  • In the egg yolk that is blended into a light yellow mix, add melted butter, a spoon full of vanilla essence, and mix well.
  • Now add a quarter glass of milk and mix thoroughly.
  • Now, add a cup of sugar which is grinded in a mixer jar into a fine powder. Mix all these well using a spatula.
  • Take a sieve and get the maida, baking powder and baking soda sieved and add them altogether into the egg mix. At this stage, make sure not to mix it too much as it may affect the fluffiness of the cake. A gentle mixing will help at this stage.
  • As you can see a light yellow mixture, add the egg white that you have blended and kept aside.
  • Now this egg white has to be mixed with the cake mix. In this stage, remember to be too gentle with the mixing process. Simply twist the egg white and mix it with the cake base in small portions. Do not use blender at this stage. The air bubbles preset in the egg white is going to contribute the fluffiness of the cake. And so, it should not be broken by over mixing.
  • Now, you should be achieving a batter that is neither too thick nor too thin. It should be more like an idli batter.
  • Finally, you can add nuts and raisins of your choice.
  • Baking in the microwave oven
  • Switch on the microwave oven and preheat it for about 3 minutes.
  • Now, in a cake making bowl, apply butter and pour the cake mix until it fills half of the bowl. It should not be filled fully as the cake will bounce up once baked.
  • Now, microwave the cake mix at 180 degrees for about 1 15 to 20 minutes depending on the type of oven you use.
  • Once cooked, you can insert a knife or a tooth pick inside the cake to know if the cake is cooked. When fully ready, the cake knife will be clean without anything stuck on to it. With that, you can understand that the cake is fully cooked. If the cake gets stuck onto the knife, bake it for a few more minutes until there is nothing sticky on the knife.
  • And your cake is now ready!

Take out the cake tray and allow it to get cooled for about 5-10 minutes. Gently reverse it upside down and start making pieces of it.
