Recipe for the black gram dosas

Generally, most of us have eaten a lot of varieties of dosas, an ever-favourite dish. However, the ‘black’ blackgram dosa is somewhat unique and different!

Here is the recipe:

Ingredients

  •         Idli rice – 4 cups

  •         Black gram – 1 cup

  •         Fenugreek seeds – 1 spoon

  •         Salt – to taste

  •         Oil – as required

Recipe

As per our general routine, after washing, keep the rice and the blackgram soaked in separate vessels for some time (Preferred – idli rice - 6 hours and blackgram – 2 hours).

First, grind the blackgram first and grind it in a grinder or mixie to make a fluffy paste with the minimum water adding it gradually while grinding. Then, grind the rice in a similar way. Once both are ground, mix them together in the larger vessel. Keep this for 8 to 10 hours to allow fermentation.  Now, the batter is ready. Now, take the batter out and add the required salt.

Keep the dosa pan on the stove and switch on. Now, take the batter in a ladle and spread across for a round shape and spread evenly. After 1 or 2 minutes, add oil by spraying on the edges and a few spots in the centre. Once the bottom side is cooked, flip and do the same for the reverse by spreading a small quantity of oil again. Remove from pan once cooked. Dosa is ready!
