These foods could be consumed in raw form without cooking

We all consume foods after cooking and this has been happening since long time. It is said that by cooking lot of physical as well as chemical changes are brought out in the foods. Food becomes digestible and edible after it is cooked well. Not only that the atoms and molecules that are packed compactly in the solid raw food gets loosened after heating. Most of us would be surprised to know that certain foods when heated lose its nutritional values. Hence it is essential to eat these foods in their raw form to get the necessary nutrition required by us.

The foods that could be consumed in raw form without cooking are

Beetroot:

It is known that beetroot has folate, potassium and other minerals in it.  There are some benefits of intake of beetroot. The haemoglobin in blood gets increased, BP is maintained etc. It is said that by cooking beetroot loses 1/4th of its folate content. Hence beetroot should be consumed without cooking.

Spinach:

This is also one food/vegetable that we must not cook and eat. There are many minerals like potassium, magnesium etc present in spinach. There are also many vitamins like B6, B9 and vitamin E in spinach. By cooking spinach large number of nutrients gets lost as these nutrients are soluble in water.

Garlic:

This garlic is used to make many dishes for its unique and amazing taste is well known. Garlic provides us many health benefits like lowering BP, cholesterol levels, reduces heart diseases etc in us. It is revealed that on cooking garlic allicin gets released and this breaks down organosulfur compounds that are good for our body.

Onion:

This is also one fabulous food that majority of us consume. The food gets great taste with the presence of onion in it. Onion must be consumed by us in the raw form without cooking. It is brought out that cooking break down large sugar molecules in onion and form mono saccharides.

Broccolli:

This is also one important food that when cooked loses its effectiveness. Hence it must be consumed in raw form. This broccoli contains many vitamins and minerals like calcium, potassium etc. The presence of sulforaphane in broccoli does superbly in fighting cancer cells, lowering BP etc. Studies have shown that people who consumed raw broccoli absorbed sulforaphane more quickly and higher quantities than those who ate cooked broccoli.

Berries:

They contain antioxidants, vitamins, fibres etc in them and intake of berries could provide us many health benefits. The polyphenols in berries are sensitive to heat and hence berries must be consumed in raw form.

Nuts:

It is fabulous to eat nuts as they contain vitamin E, magnesium, protein plus fibre, fat etc in them. The saturated fats present in the nuts gets oxidised when nuts are heated. Nuts must be consumed without roasting as roasting could lower the nutritional value plus lead to formation of carcinogenic compounds etc.

Coconut:

We all love consuming coconut. It has got fibre, vitamin C, plus many nutrients susuch a potassium, magnesium etc. The good fat present in coconut get destroyed when it is heated.

Red bell pepper:

The red bell pepper might taste good when eaten after cooking but it is better to consume it in the raw form without cooking. When cooked or heated the red bell pepper loses large quantities of vitamin C and that is not good.
