It is well known that the cooking oils are an essential part of our daily meals. Truth is that each cooking oil has different properties associated with it. Smoking point:
The point at which solids in the oil begin to burn and denature is the smoking point of the oil. Truth is that cooking oils have different temperature thresholds based on the composition. This would determine the ideal method of cooking that particular oil is used for. The cooking oil suitability would be higher for frying foods if it has got a high smoking point.
Flavour of the cooking oil:
It is said that for lubricant in the cooking process we must opt for light flavoured oils and if the flavour of the oil has to play a part in the dish then we must opt for oil with distinguished flavour. By proper selection of cooking oils, the dish would get enhanced.
Checking on nutritional considerations:
Point is that cooking oils must be enriched with vitamins A, E and D that are an essential part of the diet. Each vitamin has got a specific role. It is important to mention that Vitamin A would be good for vision and vitamin E is an antioxidant that would protect body tissue damage due to free radicals. Vitamin D would be essential for bone health plus immunity. In opting the cooking oil all these are vital.
Fat content:
There are 3 types of fatty acids present in the cooking oils and these are MUFA or monounsaturated fatty acids, PUFA or polyunsaturated fatty acids and SFA or saturated fatty acids. Truth is that saturated fatty acids are highly stable and resists oxidation. High cholesterol issues plus heart diseases etc could be avoided by using poly unsaturated fatty acids and monounsaturated fatty acids. It is important that we must choose oil that balances these.
Price:
Cooking oils that are of good quality would cost more due to the difficulty associated with production. Point to be noted is that we must buy good quality oils in small quantities and not cheap oils in huge amounts.
