INGREDIENTS:
- Green Bean Sprouts – 200 grams
- Urad Dal – 1 tsp
- Mustard Seeds – ½ tsp
- Dried Red Chilli – 2 nos
- Chopped Onion – 1 small cup (2 nos)
- Curry Leaves – 8-10 nos
- Oil – 2 tsp
- Salt – To taste
- Asafetida/Hing – A Pinch
METHOD:
- Wash the green gram thoroughly twice and soak the green gram overnight. Next day morning, drain the excess water.
- Let it sit this way in warm place for another half a day and you can observe small sprouts, sprouting from the gram in the evening.
- Heat oil in a kadai, splutter mustard seeds, add urad dal, hing, red chilies, salt, and curry leaves. Saute until urad dal starts to change colour and then add chopped Onion, it turns golden borwn.
- Then add the sprouted green gram to this and mix well.
- If you want the green gram to boil well, then sprinkle little water on the sprouts. Steam cook for 3 to 5 minutes.
- Instead of steam cook, let it sit for another 5 minutes for the flavours to mingle. Take it off the heat, serve it hot with a cup of hot tea or coffee.
- Even you can simply eat raw sprouted green grams, as it is beneficial for health.
- Sprouted green gram is an excellent source of low-fat protein and fibre and also it is rich in digestive enzymes.
