Healthy Food Recipes - Sweet pumpkin chutney ( Parangikai chutney)

Ingredients:
  • Sweet pumpkin – 250 gm
  • Onion – 5 No
  • Tomato – 3 No
  • Urad dal – 3 spoon
  • Bengal gram – 1 spoon (optional)
  • Ginger – as required
  • Curry leaves – a hand full
  • Coriander leaves – as required
  • Coconut – as required
  • Tamarind – as required (optional)
  • Salt – as required
  • Oil – as required
  • Mustard and asafetida – as required
  • Red Chilli - 3 No
Method:
  1. Peel off the skin from sweet pumpkin and cut it into fine pieces



  2. Heat a pan and add oil. Add urad dall and Bengal gram (if required) and dry red chillies. Fry them all and keep it separate
  3. Heat a pan again and add some oil. Add curry leaves, coriander, ginger, onion and sweet lime one followed by the other
  4. Cook the mixture for about five minutes and then add chopped tomatoes



  5. Take the fried dal (as in step 2) and grind it in a mixer together with coconut and salt. Add the pumpkin mixture to this and grind all together.



  6. You can add mustard seasoning to this
Note:
  • Before grinding in mixer, make sure that the entire mixture gets cooled down
  • Make sure that you add the fried pumpkin mix only after grinding dry fried dal mix
  • If you prefer to add tamarind flavor, you can add it as required
  • Those who are in diet may avoid use of coconut
  • In chutneys of this type, you can add curry leaves and coriander right when you fry the vegetables
  • As they get ground together with the vegetables, it will get mixed together with the chutney mixture
  • This goes good with Chappathi, Dhosai and rice as well



  • Sweet pumpkin is too good for health. This vegetable is recommended for frequent consumption
