Healthy Food Recipes - Carrot & Potato Poriyal

Ingredients:
  • Carrot – 250 gmsPotato – 1 medium size
  • Red Chilli / Green Chilli– 3 nos
  • Onion – 1 nos
  • Curry leaves – A few
  • Salt – To taste
  • Oil – 4 Spoon
  • Mustard Seeds – ½ spoon
  • Cumin Seeds – ½ Spoon
  •  Urad Dhal – 1 spoon
Method:

  1. Rinse and peel off the carrot and grate it finely ((more finely, faster they will cook).
  2. Same way, rinse and peel off the potato and cut it into small even sized pieces. 
  3. Heat the pan with 4 spoon of oil and urad dal, mustard seeds and cumin seeds.
  4. Fry till the mustard seed make a popping sound and the urad dal get maroonish golden. Make sure you don’t burn them.
  5. Then add either the chopped red chilli or green chilli.
  6. Now add the curry leaves and add chopped onion.
  7. Sauté the onion until get the colour turns to be golden.
  8. Now add the potato pieces and add salt to taste and allow it to boil well for about 3 minutes.
  9. Now it’s time to add the grated carrots and stir well.
  10. Sprinkle some water if the moisture dries in the pan and close the lid so that the veggies can cook well.
  11. Stir the dish once in every 2 minutes and after 10 minutes switch off the flame.
  12. Transfer it into a small vessel and sprinkle few coriander leaves for garnishing.
Note:
  1. It is always advisable to peel off and rinse the carrot using the tap water, thereby the germs present in the carrot skin can be get rid of.
  2. If the carrot doesn’t have enough sweet taste than usual, we can very well add a spoon of sugar once the veggies got cooked well.
  3. Carrot is very essential in our daily diet, as it is good for proper eye sight.
  4. Carrot can augment our body’s immune system.
  5. It is well known to avert heart disease and controls blood sugar levels.
  6. Regular intake of carrot boost eye sight.
  7. Carrot reduced the blood pressure and the menace of stroke.
  8. It aids prevent from cancer and shields you from liver diseases.
  9. Doctors suggests to use carrots in our daily diet because of its beta-carotene and fibre rich content.
