Healthy Food Recipes - Festival Special Murukku

Ingredients:
  • Raw Rice – 1 kg
  • Urad Dhal – 250 grams
  • Cumin seeds – 2 spoon
  • Ghee – 50 ml
  • Fried Gram – 100 grams
  • Salt – To taste
  • Oil – 100ml
  • Sesame – 2 spoon
  • Oil for Deep Fry – 750 ml
Method:
  1. Wash, drain and spread the raw rice on a cotton cloth to absorb the excess moisture under the sunlight for some time. 
  2. Just heat the urad dal in a pan, and allow it to cool. 
  3. Grind dried rice, urad dal and fried gram into a fine powder.
  4. Sieve both the flours together through a fine sieve.
  5. Add the cumin seeds, salt, sesame and 100 ml of oil make a firm dough with the sieved flour. Rub in the ghee and knead with light hands to fully combine the butter.
  6. Be careful with water. You want just enough water for the dough to come together.


  7. Pinch of some dough and place it inside the mould. Now using the top, press the dough through the star shaped (whatever it may be) hole.

  9. Heat 750 ml of oil and fry the muruku’s in batches. Take them on a plate and gently slide them into the oil and fry on both sides till it becomes light golden brown and crisp.

  11. Drain and let it cool before serving them. Store in a dry air-tight container.

  13. If you want to prepare a lesser number of muruku’s, then reduce the above mentioned quantity and grind the flour in your home mixer.
