Ingredients:
  • Vazhakkai (plantain) – 2 nos
  • Onion – 2 nos
  • Tomato – 2 nos
  • Garlic – 10 nos
  • Curry Leaves – few
  • Cumin Seeds – ½ spoon
  • Mustard Seeds – ½ spoon
  • Oil – 4 spoons
  • Salt – To taste
  • Turmeric powder -1/2 tsp
  • Sambar Powder – ½ spoon
  • Grated coconut - 1/4 cup (Optional)
Method:
  1. Peel the skin of plantain and chop it into cubes or medium sized pieces. Keep it in water to prevent discoloration, else its colour turns black.

  2.
  3. Heat oil in a kadai, add mustard seeds and cumin seeds and when it splutters, add urad dal. When dal turns golden brown, add chopped garlic and curry leaves.
  4. Now add the chopped onion and then tomato and sauté for about 2 minutes till tomato shrinks and raw smell leaves.

  5.
  6. Add salt as required and mix well.
  7. Add the required quantity of water at this stage and add turmeric powder, sambar powder and allow it to boil for some time.
  8. Sauté for 2-3 seconds and then add the plantain. You can pressure cook this until soft but not mushy. It should retain its shape, so make sure you do not overcook it.
  9. Else if you have cut the plantain into small even sized pieces, you can boil it in the kadai itself by closing the lid and boiling it for about for 5 to 10 minutes.
  10. Mix well so that it is well coated with the seasoning. Check for salt. If required add and mix well.
  11. Grind the coconut in a mixer without adding water.
  12. Then add grated coconut, mix well and remove from heat.

  13.
  14. Delicious, easy and healthy plantain stir fry is ready to be served with rice.

  15.
Note:
  • This recipe is prepared with very less oil and is very healthy compared to the Vazhakkai fry.
  • It goes very well with rasam and sambar rice and is commonly served in marriages.
  • As raw plantain might cause stomach discomfort for some people, so do not omit adding garlic and ginger when preparing this curry.
