Healthy Food Recipes - Carrot Beans & Peas Poriyal

Ingredients:
  • Beans – 1 cup
  • Carrot – 1 cup
  • Fresh green peas – 1 cup
  • Moong Dal – 50 grams
  • Onion – 1 nos
  • Red Chilli / Green Chilli – 3 nos
  • Turmeric powder – ½ spoon
  • Garlic – 5 nos
  • Mustard seeds – ½ spoon
  • Cumin seeds – ½ spoon
  • Curry leaves – a few
  • Salt – To taste
  • Coconut -  small piece
  • Oil – 3 spoons
Method:
  1. Wash and soak the moong dal for about half an hour before the preparation of the dish.
  2. Cut the vegetables into small even sized pieces (smaller the pieces, it will cook well).



  3. Heat oil in the pan and add mustard seeds and cumin seeds for tempering.
  4. Then add the curry leaves and either red or green chilli into it.
  5. Now add the chopped onion into it and sauté until its colour turns golden brown.
  6. Add the chopped carrot, beans and fresh green peas into it and stir well for 3 minutes.



  7. Sprinkle turmeric powder and salt to taste.
  8. Now drain the moong dal and add it to the dish.
  9. Add little quantity of water and pressure cook it for 1 whistle.



  10. Once the vegetables cooked well, open the lid add the grated coconut and stir well.
  11. Serve it hot!



  12. It will go well with rice or with chapatti.
Note:
  • Peas is the rich source of Vitamin A and C and rich in iron.
  • As peas in rich in nutrient content, it is suggested to include as much as possible in day to day food preparations.
  • Since this dish has prepared along with dal, you can serve it to the kids with rice along with a spoon of ghee.
