Wash boiled rice, raw rice and pearl millet thoroughly and soak in water for about 3 to 4 hours.
Same way soak fenugreek in water.
Just half an before the preparation of the dough, soak urad dal in water.
Grind the rice and the pearl millet in a mixer.
Then add the fenugreek and urad dal and grind well.
Then add salt to the batter and allow it to ferment for some time.
Once the dough got fermented, you can use the batter for about 5 to 6 hours. This duration is solely based on the weather.
Now mix the cooking soda in 3 spoons of water and mix well and add it to the batter.
Heat oil in the kadai and add urad dal and Bengal gram and sauté until it turns golden brown.
Now add chopped green chilli, curry leaves, coriander leaves and onion and sauté well and drop it to the dosai batter.
Heat dosai tawa, then take a ladle full of idli dosai batter; in medium flame add the dosai batter to the dosai tawa and keep spreading in circular motion outwards. Drizzle oil, when the dosai gets slightly browned turn over to other side and cook for few seconds then flip over and fold it.
Your hot Kambu dosai is ready! Serve with idli podi / any chutney (tomato chutney / red coconut chutney) of your choice.
Note:
Soak fenugreek at the same time when you soak boiled rice, raw rice and pearl millet in water. The Kambu dosai will be very soft if you soak fenugreek for about 3 to 4 hours too.
Instead of adding tempering with the addition of onion, you can prepare the plain Kambu dosai.
Once the batter gets fermented, use the entire dough for the same day and don’t use it to the next day.
