Healthy Food Recipes - Potato Curry Recipe

Ingredients:
  • Potato – 6 nos (small)
  • Onion – 2 nos
  • Garlic – 6 cloves
  • Curry Leaves – a few
  • Turmeric Powder – ¼ tbsp
  • Sambar Powder – 1 tsp
  • Salt – as required
  • Oil – 3 tbsp
  • Mustard seeds – ¼ tbsp
Method of Preparation:
  1. Wash the potatoes thoroughly and peel off the skin.
  2. Cut it in round shape even sized pieces.



  3. Finely chop both onion and garlic and grind it in a mixer to a smooth paste without the addition of water.
  4. Heat the pan with 3 spoon of oil and add mustard seeds and curry leaves and wait till it gets splutter.



  5. Then add the garlic and onion paste into it.
  6. Once it got fried well, now add the sliced potato into it and stir well.



  7. Saute it well for about 2 minutes and then add salt, turmeric powder, sambar powder and stir well.



  8. Then add required minimum quantity of water.
  9. Close the lid and allow the potato to get boil well for about 3 to 5 minutes.
  10. Open the lid and stir well and switch of the flame.



  11. Transfer it in a serving bowl and sprinkle coriander leaves for garnishing.



Tips:
  • Tasty and healthy side dish for rice, adored by people irrespective of the age from children to adults.
  • As we already boil the potatoes in the oil, only little quantity if water is more than enough to add finally to boil the potato.
  • Once you have sliced off the potatoes before the preparation of the dish, keep it in a bowl of water, else the colour of potato may turns dark.
