Here are the step-by-step instructions to prepare Karuveppilai Podi (Curry Leaves Powder) at your home.
Ingredients:
- Curry leaves - 3 Handful
- Urad dal - 100 gram
- Red Chilli - 8
- Hing - pinch
- Salt - as needed
- Oil - 3 tsp
Method:
- Wash Curry leaves well and spread the washed curry leaves in a towel and dry it for 5-6 hrs.
- Heat kadai with 1 tsp of oil, add Urad dal, roast until dal turns golden brown, keep aside.
- Heat kadai with 1 tsp of oil, add Red chillies, roast for a minute, keep aside.
- Again heat kadai with 1 tsp of oil, add curry leaves, roast curry leaves on low flame.
- Roast till curry leaves turn crunchy.
- Dry grind everything together with hing and needed salt.
- Store it in an air tight container,
- Serve this with hot rice and ghee.
Note: Oil is optional, You can dry roast all the ingredients without oil.
