Dosa is a popular South Indian dish that is typically eaten for breakfast or as a snack. Here is a recipe for making dosa at home:
Ingredients:
- 1 cup regular rice
- 1 cup parboiled rice (idli rice)
- 1/2 cup urad dal (split black lentils)
- 1/2 tsp fenugreek seeds
- Salt to taste
- Water as needed
- Oil for cooking
Instructions:
1. Wash the rice and urad dal separately and soak them in enough water for at least 6 hours, along with fenugreek seeds.
2. After soaking, drain the water from the rice and urad dal and grind them separately to a fine batter. Use water as needed while grinding. The batter should not be too thick or too thin, and should be smooth and without any lumps.
3. Mix both the batters together in a large bowl and add salt to taste. Mix well, cover and let the batter ferment in a warm place for at least 8 hours or overnight. The batter should double in volume.
4. After the batter has fermented, give it a good stir. If the batter is too thick, add some water to make it thinner.
5. Heat a non-stick or cast iron skillet over medium-high heat. When the skillet is hot, pour a ladleful of batter onto the center of the skillet and spread it evenly in a circular motion to make a thin dosa.
6. Drizzle some oil around the edges of the dosa and let it cook until the edges start to turn golden brown and crisp.
7. Flip the dosa over and cook for another minute on the other side.
8. Remove the dosa from the skillet and repeat the process with the remaining batter.
9. Serve hot with chutney and sambar.
