Ingredients:
- Toor dal – 100 gm
- Brinjal – 200 gm
- Onion – 5 No
- Tomato – 3 No
- Tamarind – the size of a small lemon
- Mustard, fennel seeds – ½ spoon
- Fenugreek seeds – ½ spoon
- Turmeric powder – ½ spoon
- Sambar powder – 2 spoon
- Salt – as required
Method:
- Soak toor dal in water for about half an hour and get it cooked in a cooker
- Place a pan and heat 3 spoons of oil. Add fenugreek seeds for seasoning. Make sure that it doesn’t turn black
- Add chopped onions, tomatoes and brinjals one followed by the other
- Add salt as required, and pour some water. Add turmeric powder and sambar powder and close it with a lid. Allow the vegetables to get cooked.
- Add the cooked dal at this stage
- Add tamarind water to the mixture
- Once the mixture comes to a boil, allow it to get cooked in a low flame for 5 minutes
- Heat a small pan, heat oil and add mustard, and fennel seeds. Add this seasoning to the sambar
- You can add coriander leaves at the end and serve hot and tasty brinjal sambar
Note:
You can add fenugreek seeds in most varieties of cooking. This will help cooling down your body
