Kolukattai is Lord Ganesha’s favorite! Of course, it is the favorite for most of us! When it is done the right way, it can be really a very tasty snack. There are still many people who do it with hand without the need for any mold to get the shape. Here is the recipe for Kolukattai:
Kolukattai:

Recipe for 12 to 15 Modak or Kolukattai
Ingredients:
Dough ingredients:
Rice flour – 1 cup
Salt – a pinch
Hot boiling water – as required
Gingelly oil – 2 tsp and more to grease the mold or dab on hand
For filling:
Jaggery or palm sugar – 1.5 cups
Water – 1.5 cups
Freshly grated coconut – 1.5 cups
Cardamom powder – 1 tsp
Ghee – 1 tsp
Preparation of filling:
Step 1 – blend pieces of freshly cut coconut and pulse it to extract grated coconut
Step 2 – Take a sauce pan. Add water and jaggery and let it melt in heat. Strain the dirt present in jaggery
Step 3 – add grated coconut to the liquidized jaggery and thoroughly mix it. Let it get cooled, and it will turn very thick. To this, add cardamom powder and ghee and mix altogether. Take this from the pan and let it cool
Preparation of dough:
Take a sauce pan and add water to it. Add salt and a teaspoon of oil. Once this comes to a boil, add the rice flour and start mixing. It should turn into a sticky dough. Once you have achieved the consistency, remove it to a bowl and allow it to get cooled down for about 15 minutes.
After it gets cooled down, add a teaspoon of oil and make it softer.
Preparation of Kolukattai or Modak:
If you are preparing the Kolukattai in a mold, firstly grease it with oil or ghee. Take a little of the rice flour dough and spread it in the mold. Inside this, place the filling. Now close the mold and release it. The modak will now be ready.
If you are preparing with free hand, take a portion of the rice flour dough and flatten it into a thin round sheet. Place the filling as a small rounded ball and cover the filling with the dough layer. Roll it with your hands and make it smooth.
Modaks prepared either ways can should then be placed in a steamer and cooked for about 8 to 10 minutes.
Once the time duration is over, allow the steamer to get cooled for a few minutes, remove and serve hot.
