Now, let us have a look at the recipe for varieties of `kozhukkattai`:
Dry fruits Kozhukkattai
Ingredients:
- Rice Flour - 1 cup,
- Seed-removed dates - 10,
- Cashew, Pistachio, and almond nuts - 10 each,
- Grapes (raisin) and Jaggery 50 grams each,
- Split grams - 4 teaspoons,
- Oil - 2 teaspoons,
- Salt - a pinch
Recipe
Take some water, a pinch of salt, and a little oil on a frying pan and allow to boil. Now, pour the rice flour gradually on this, and make a smooth mix. This is the external part of the dish `Kozhukkattai`.
Add cashew nuts, pistachio nuts, and almond nuts in a mixie jar and grind it coarse. Now add the dates, grapes (raisins), and the split grams to this coarsely ground powder and grind again for a few seconds. Now, the inside stuff is ready!
Grease your palm with a little oil. Take the external rice flour paste and spread it like a small cup. Place a spoon of the inside stuff, Seal and shape it as required. Now steam it for a few minutes.
Dry fruit stuffed Kozhukkattai is ready!
Sprout Kozhukkattai
Ingredients:
- Green gram sprouts - 1 cup,
- Chopped green chillies - 3,
- Grated coconut - a quarter cup,
- Rice flour - 1cup,
- Curry leaf - a few,
- Asafetida - quarter spoon,
- Oil - 4 teaspoons,
- Salt - as required
Recipe:
Heat a frying pan with some oil. Sauté the in a pan with the asafetida, and curry leaves, and then add the green gram sprouts, salt, and chopped green chillies, with a little water and allow to boil. Allow cooling. Mix well. Grease your palm with a little oil. Make small balls from the sprout mixture and keep them aside.
Now take the rice flour mix and make it flat and place a spoonful of tour mix inside and cover. Steam the stuffed item for a few minutes.
Millet Flour - Palm Jaggery Kozhukkattai
Ingredients
- Millet Flour (available in supermarkets and most grocery shops) - 1 cup,
- Palm jaggery - 1 cup,
- Small pieces of cur coconut - half cup,
- Cardamom powder and dried ginger powder - half spoon each,
- Oil - half spoon,
- Salt - as required
Recipe
Fry the millet flour in a pan for a few minutes, add some salt, and a little oil spray some water, make it into a nice mix and keep aside for 10 minutes.
Dissolve the pal Jaggery in some water, filter, and keep aside. Add a pinch of cardamom powder and dried ginger powder, and coconut pieces, Allow to boil. While boiling, add the mix of the millet flour and allow to boil till it becomes a homogenous mix.
Grease the palm with a little oil and make small balls of this mix. Steam the balls for a few minutes. Millet Flour Kozhukkattai ready!
