Healthy Food Recipes - Badam Barfi (Almond Fudge)

Ingredients:
  • Badam – 1 cup
  • Sugar – 1 cup
  • Ghee – 5 Spoon
  • Milk – 50 ml / ¼ Cup
  • Cardamom powder – a pinch
Method:
  1. Soak almond for about 5 hours in water.


  2. Then remove its skin and grind well in a mixer along with milk to a fine paste.


  3. Heat the pan and add a cup of sugar and add water in such a quantity that it should immerse the entire sugar and allow it to boil well.



  4. Once sugar dissolved (the state of thin rod), add the Badam paste and stir well.
  5. Keep on stirring until, the content will be of thicker consistency without sticking on to the bottom of the vessel.



  6. Now add the ghee and a pinch of cardamom powder and mix well.
  7. In a 10 to 15 minutes, you will get a thicker consistent state of the mix.
  8. Allow it to cook for about 10 minutes and keep a greased plate ready. Pour the almond mix into the prepared plate and press in gently. Allow it to cool for some time.


  9. Make marks on top when it is hot, else it will be tough to break into pieces once the burfi sets.



  10. Once it sets for half an hour, you can bring them into pieces and store it in an air tight container.
Notes:
  • Since almond is very nutritious for children, this is an apt dish for the children evening snacks or you can also it to them as a school snacks.
  • You can easily prepare this dish during festival season, as it is less time consuming and very healthy too.
  • If you forget to soak the almonds for 5 hours, no worries just soak almonds for 1 hour in hot water. 
  • If you want the dish to be sweeter more, just add more sugar than the equal ratio.
  • You will 200 grams of sweet from just 100 grams of almonds, thus you will not be in the urge to sweet stall during the festive season.
