Pongal Special Recipe - Sweet Pongal / Chakkarai Pongal!

Ingredients:
  • Raw Rice – 1 cup
  • Green Gram Dal (Moong Dal) – ½ cup
  • Milk – 1 cup
  • Jaggery – 1 cup
  • Ghee – 4 spoons
  • Cardamom Powder – ½ tsp
  • Cashew Nuts – 10 nos
  • Raisins – 10 nos
  • Salt – a pinch
Method:
  1. Just roast the raw rice till it becomes slightly warm.


  2. Next in the same way, roast the green gram dal for about 2 minutes in a spoon of ghee.



  3. Then add rice, dal and a pinch of salt in cooker and add 2 ½ cups of water and 1 cup of milk and keep it ready.



  4. Then pressure cook it for about 1 whistle and keep the flame to simmer for about 5 minutes and switch off the flame.
  5. Then grate the jaggery and add it to the ¼ cup of water and heat it in a simmer flame.



  6. Once the jaggery gets dissolved in the water, just strain the jaggery so as to remove the dust particles rising at the top.
  7. Again reheat the filtered jaggery syrup for about 2 to 3 minutes and now add the mixture of boiled rice and dal.



  8. Just keep on stirring for about 3 minutes completely, so as to prevent the content sticking on to the bottom of the vessel, then add cardamom powder, stir well.
  9. Heat the pan with 2 to 3 spoons of ghee in a simmer flame and add the slitted cashew nuts. Wait until it turns golden brown and add the raisins and sauté well till the size of the raisins turns bigger in size. Switch of the flame and transfer it to the sweet Pongal.



  10. Healthy, Yummy and Peppy Sweet Pongal is ready for this Pongal Eve!

Note:
  • You can very well prepare sweet Pongal without adding milk also. In that case add equal volume of water instead of milk.
  • Instead of roasting the raw rice, you can also soak the rice in water for about half an hour just before the time of preparation of the dish.
  • Always it is suggested to roast the moong dal separately in a simmer flame for any kind of dish and it will add taste to it.
  • The colour of the sweet Pongal is solely depends on the colour of the jaggery.
  • Adding more ghee will offer the dish tastier too.
  • While adding the cardamom powder, just try adding the powder of cloves, nutmeg powder and edible camphor powder. It will more tang to the sweet Pongal. But these things of optional, solely based on your choice and your time.
  • Irrespective of the age, starting from kids to adults, this sweet Pongal is a highly adorable dish and the top dish for Tamiliansns during this Pongal Festive Eve.
