Healthy Food Recipes - Sprouted Kollu Sundal / Horsegram Sundal

Ingredients:
  1. Sprouted Horsegram – 1 cup
  2. Garlic – 3 cloves
  3. Red chilli – 2
  4. Tamarind Extract – 1 tbsp
  5. Mustard seeds – ¼ tsp
  6. Urad dal – 1 tsp
  7. Curry leaves – a few
  8. Asafoetida – a pinch
  9. Cooking oil – 1 tbsp
Method of Preparation:
  1. Soak Horsegram for about 5 to 6 hours in water.


  2. Then drain it completely. Keep it in a bowl and close the lid.
  3. Within half a day, you can observe the formation of the sprouts in the Horsegram.
  4. You can very well refrigerate this sprouted horsegram for about 2 days, and can you whenever needed.
  5. Pressure cook the sprouted horsegram along with water and salt for about 2 whistles.
  6. Drain the cooked horsegram and keep it aside.
  7. You can prepare tasty and healthier rasam using the horsegram cooked water.
  8. Heat a pan with oil, add mustard seeds and urad dal. Wait until it turns light brown, add red chilli, curry leaves, and asafoetida.


  9. Then add the cooked horsegram. Taste for salt, if at all needed add a little salt to it.
  10. Mix well and add the tamarind extract. Stir well for a minute.



  11. Then switch off the stove and transfer it to a serving bowl.
  12. Garnish with coriander leaves.



  13. Hot and Healthy Sprouted Horsegram Sundal is ready!



Tips:
  • Instead of tamarind extract, you can very well add lemon juice.
  • It is the apt healthy evening snack for kids.
