Wash toor dal thoroughly and soak it in water for about half an hour.
Pressure cook the soaked toor dal with ¼ tsp of Turmeric powder for about 3 whistles, until it becomes mushy.
Wash lady finger thoroughly in running water and wipe it with a cotton cloth.
Then cut into small sized pieces as you wish.
Then finely chop onion and tomato and keep it aside.
Heat a pan with a spoon of oil and add the pieces of lady finger. Saute it well for a minute.
Transfer it in a separate plate.
Then heat the same pan with 2 spoons of oil and add fenugreek. Roast it till fenugreek becomes slightly golden, add chopped onion and saute well.
Add the sautéed lady finger to it and stir well.
Then add the chopped tomato and saute well until the tomato shrinks and the raw smell leaves.
Saute it for a minute and add salt and sambar powder and mix well.
Add required quantity of water and allow the contents to boil well for about 5 minutes.
Now add the cooked and smashed toor dal to it.
At the time when sambar get boiled well, add the tamarind extract and keep the stove in low flame for 2 minutes and then switch off the flame.
Heat a small pan with a spoon of oil, add mustard seeds and cumin seeds for tempering and drop it on top of the sambar.
Transfer it to the serving bowl and add coriander leaves for garnishing.
Hot Lady’s Finger Dal Sambar is ready to serve with rice!
Tips:
Whenever you prepare Lady’s Finger sambar, it is good to saute the chopped Lady’s finger in a spoon of oil before adding it to the dal. Then only vegetables will not be stickier and not be cracked at all.
