Required ingredients
- Cashews – 1 cup
- Milk – 0.25 cup
- Sugar – 0.75 cup
- Water – 0.5 cup
- Saffron strands – 10
- Ghee – 1 tsp
- Milk – 2 tsp (to remove scup out of sugar syrup)
Method to prepare Kaju Katli
Take a plate and grease it with ghee and have it ready
Step 1 – take cashews and break them into two pieces. Soak these in hot water for about 1.5 hours. After this, drain the water. Make a fine paste out of cashew by adding 0.25 cup of milk. Do not bother if there are tiny pieces in between.
Procedure
- Dissolve sugar in water and keep it in low flame. Allow it to get boiled. Now add 2 tablespoons of milk and allow this to boil for a few more seconds. Now, you can find all the scum getting accumulated on the surface. Remove it off the surface and filter the sugar syrup. You can thus achieve a pure sugar syrup without any kind of impurities.
- Keep boiling the sugar syrup until you achieve one string consistency. To this, add the cashew paste and saffron strands.
- Now, keep the flame in medium flame and continue cooking the cashew nut paste.
- You can find the mixture getting thick and it will leave the sides of the pan. At this stage, take the greased plate and pour the mixture onto it. Evenly spread the dough all over the plate.
- Allow it to get slightly cooled. Now, make cuts using sharp knife in the shapes as you desire. Let it get fully cooled down. Now, remove the Kaju Katli pieces gently from the plate.
Well, one of the most common mistakes we make is adding the cashew nut paste even before achieving one string consistency. If you make the same mistake, there is nothing to worry as you have the dry preparation of Kaju Katli which is mentioned below:
- Cashew nuts - 1 cup and 6-7 cashews
- Sugar – 0.5 cup
- Cardamom powder - 0.25 teaspoon
- Saffron stands – 4 to 5
- Water – 0.25 cup
- Ghee -2 teaspoon
Method to prepare
- Make a powder out of the cashew nuts. This is very important. Make sure to have these cashews too dry. If you have stored it in the fridge, do not grind immediately. Allow it to turn into room temperature and then grind into a fine powder. Also, do not run the mixi at a stretch while grinding.
- Take a plate and grease it with ghee fully
- Take a non-stick pan and add water and sugar. Boil it till the sugar gets dissolved. To this, add the saffron strings and cardamom powder and the cashew nut powder.
- Mix it thoroughly in low flame. Add ghee to this and keep cooking until the mixture leaves the pan s sides.
- Makes sure that you achieve a non-sticky mixture such that you can make a ball out of it. One achieved, turn off the flame and spread it on the greased plate.
- Once it gets partially gets cooled, make cuts with a sharp knife. And remove the pieces after the mixture gets completely cooled down.
