Lunch box for kids - Mushroom Pulao

Are you often late in the morning?  Do you often rush to the kitchen to pack your kid’s lunchbox? Well, most of us are. So, you need quick and easy to make dishes that do not take any compromise on the taste, and also healthy to your little ones. Here is one!

Mushroom pulao

This hardly takes 30 minutes to make and it is a perfect choice to go with in those busy hours of morning.

Required ingredients
  • Ghee – 2 tbsp
  • Cloves – 2 tbsp
  • Cardamom  - 2 No.
  • Cinnamon sticks – 1
  • Onion (medium sized) – 2 No. (thinly sliced)
  • Garlic – 5 pods
  • Ginger – of 1 inch size
  • Black pepper – 1 tbsp
  • Salt – as required
  • Button mushrooms – 300 grams
  • Green peas – ¼ cup
  • Basmati rice – 1 cup
  • Water – 1.5 cup
Preparation
  • Soak basmati rice right while you start cooking
  • Thinly chop onions
  • Get the button mushrooms cut into 4 pieces each
  • Make a paste out of garlic, ginger and pepper with a little amount of water and keep ready.

Cooking Method
  • Take a cooker and add ghee. Once it gets melted, add cloves, cardamom and cinnamon sticks.
  • As this sputters, add onions and sauté well until it turns golden brown in color
  • Add the ginger, garlic, pepper paste and sauté thoroughly
  • Fry this mixture for about 5-6 minutes. You can find this getting dry now
  • Now, add the mushroom pieces and mix thoroughly such that the masala gets coated well on the mushrooms
  • It’s now time to add the rice. Drain the rice and add in the cooker.
  • As stated above, for one cup of rice, add one and a half cups of water, and cook the content for 2 whistles in high.
  • Switch off the stove and wait for the pressure to get released on its own.
  • Give a wait time of 8-10 minutes for the pressure to settle and then open it. You will find soft and fluffed up rice. And your mushroom pulao is ready!
  • This is an excellent lunch box recipe for kids as well as adults.  As we do not add any green chillies, the dish is going to suit kids of all ages without much spicy taste.
  • This dish can be served with brinjal gravy or ennai kathirikkai. As the pulao is going to be bland, you can go for spicy curry as an accompaniment. Non-vegetarians may opt for dishes like Chicken pepper gravy or chilli chicken, or a simple fish fry would do too!
