Sweet Potato: A vegetable rich in nutrients!

Though sweet potato does not appear like a rich colourful vegetable, it contains a good quantity of beta-carotene.

Sweet potato increases the vitamin ‘A’ level in blood.

It also contains anti-oxidant property and anti-inflammatory property. It also destroys the germs or bacteria acting against oxygen absorption.

As it tastes sweet, there is a false public opinion that it is not good for diabetics.

On the contrary, a special starch in sweet potato tends to normalise the blood.

As sweet potato is rich in fibre, it delays the process of starch entering the blood  and brings down the sugar level in the blood.

Sweet Potato has a medicinal property and is good for people suffering from piles, constipation, etc.

To select a good quality sweet potato, check whether it feels hard solid in the hands. The skin of the vegetable should be free from spots.

If  it is shrunk in the ends, it is old. Do not wash the mud off immediately after buying. Moisture spoils the vegetable easily. Hence, it is better to wash the vegetable just before use.

Do not keep it in the refrigerator as it will tend to dry up and lose its flavour!
