What you need
- Cooked white rice - 1 cup
- Raw Mango - 1 Medium size washed, peeled and grated.
- Fresh coconut - 1 cup grated
- Green Chillies - 2 nos cut into small bits
For Seasoning:
- Mustered - ½ tsp
- Urad dhal split - ½ tsp
- Cashews - 2 tbsp cut into fine bits
- Turmeric powder - ¼ tsp
Grind Masala:
- Dry red chillies - 2nos
- Methi or fenugreek seeds - ½ tsp
- Mustard seeds - ½ tsp
- Dry roast red chillies, methi and mustard till methi turns colour and cool. grind it coarsely and keep aside.
- sesame Oil for seasoning - 2 tablespoon
- 2tsp ghee for flavour
- Asafoetida or Hing - ¼ tsp
- Salt to taste
- Frozen Peas - ½ cup
Method:
- Take a large bottom Kadai or Pan and heat oil add mustard, urad dhal,cashews, Hing, and toss till it gets light golden.
- Add turmeric powder saute, add green chilies,grated mango, salt and toss well. Add grated coconut and frozen peas ½ cup and saute well.
- All together will look golden yellow in colour. Add cooked white rice and two tsp of ghee and mix well , Switch off the heat and add 2 tsp of ground masala and mix it well. Spicy Then manga pattani rice ready.
