Heat a pan, and add a spoon of oil and add 2 spoon of toor dal to it.
Allow the toor dal to get fried slightly and switch off the flame, then add the khus-khus (poppy seeds) to it, this is mainly to avoid khus-khus to get deeply fried.
Allow it to cool for some time. Then grind this well in a mixer along with a piece of coconut and water.
Again heat the pan and add 4 spoon of oil and add cumin seeds, mustard seeds, and chopped garlic and curry leaves for tempering.
Then add the chopped onion, tomatoes and sauté for about 2 minutes till tomato shrinks and raw smell leaves.
Then add the chopped brinjals. Then add the needed salt, a pinch of turmeric powder and a spoon of sambar powder. Add the required quantity of water and close the pan lid and allow it to boil for some time until the brinjals gets cooked well.
Just check whether the brinjal is cooked well, then add the prepared paste. While adding the grinded paste, it is always better keep on stir the sambar in parallel so as to avoid the formation of cramps.
Soak tamarind in warm water, discard the seeds and add this to sambar.
Allow it boil for 5 minutes, till the raw tamarind smell is set aside.
This khus-khus sambar will go fine for rice.
