Healthy Food Recipes - Murungai Keerai Poriyal (Drumstick Leaves Poriyal)

Ingredients:
  • Murungai Keerai (Drumstick Leaves) – 1 cup
  • Onion - 2 nos.
  • Garlic – 10 nos.
  • Red Chilli – 2 nos
  • Salt – To taste
  • Cumin seed – ½ spoon
  • Mustard seed – ½ spoon
  • Bengal Gram (Kadala Parupu) – ½ spoon
  • Urad Dhal – ½ spoon
  • Oil – 4 spoon
To Roast and grind:
  • Ground nuts – 3 spoon
  • Red chilli – 1 no
Method:
  1. Thoroughly wash the drumstick leaves and keep it aside.
  2. In a kadai, heat 3 spoons of ground nut. Remove its skin and grind it along with 1 red chilli.

  4. Then again heat the pan and add oil to it. Then add cumin seeds, mustard seeds and allow to splutter.

  6. Also add the Bengal gram and urad dal to it for tempering.
  7. Wait until dal becomes light brown, then add Red chilli, Garlic, and chopped onion. Add salt to taste and add 100 ml of water to it
  8. Once the water gets boiled well, add the drumsticks and stir well, so that leaves do not get stick to each another as it may stop it from boiling well.

  10. Then close the lid and allow it to boil for 5 minutes. 



  11. Finally add the grinded paste and stir well and serve hot.

Note:
  • Do not allow the drumstick leaves to boil for longer times, as it may bring in bitter taste to the dish.
  • Each and every greens will have slight bitter taste and over cook will elate it.
  • In villages, people do not have the practice of rinsing the greens (Murungai keerai) as the believe washing might wind off the vitamins in it. (It`s not cooking well)
  • In city, we ought to wash the greens  before using it, due to over dust and pollution.
  • After rinsing the leaves, drain it well and use it.
  • Drumstick tree’s pods, flower tops, leaves, stem, root are all have nutritional values.
  • An old proverb says, ‘A house can turns wealthy, if it owns a cow and a drumstick tree’.
  • Incorporate drumstick leaves and fruits in your daily diet and attain its health benefits!
