Fenugreek seeds green-leaves ‘thuvaiyal’ (a form of chutney)
Ingredients
- Fenugreek green leaves - 100 grams
- Tomatoes - 2
- Pepper seeds - 10 grams
- Onions -2
- Split gram pulse - 20 grams
- Black gram - 20 grams
- Asafoetida - as required
- Mustard seeds - as required
- Curry leaves - as required
The recipe
Wash and clean the fenugreek green leaves. Add a few spoons of oil in a pan. Once hot, add mustard seeds and allow to crackle. The add the pulses split gram and black gram, pepper seeds, curry leaves, and asafoetida and fry for a few minutes. Now, add the fenugreek green leaves. Fry for some time. Now, add the chopped onion, fry and then add chopped tomatoes and fry for some time adding a spoon of oil. Once fried, add salt, allow to cool and then grind it into a smooth paste. The dish is ready for use!

The diabetics can have this as a regular daily dish in their diet. Further, this dish can cure complaints such as body-heat related ailments and the ulcer of the liver.
Note:
It is advisable to steam all the vegetables and greens and then prepare the dish and take as a part of the regular diet. Ginger can be used instead of green chillies and pepper can be used instead of the dry red chillies.
